Loose Leaf Herbal Teas - Hand Crafted In Ireland
There is nothing more satisfying and enjoyable than the
fresh taste of hand crafted, loose-leaf herbal tea. Unlike finely cut conventional tea found in mass manufactured tea bags, our loose-leaf herbal tea is fresh, fragrant, tasty, longer lasting and more economical. Our passion for freshness provides us with the groundwork that all of the herbal teas we blend are made fresh prior to your order and exclusively with aromatic organic materials, some grown and harvested on our farm in beautiful West Cork. It is this simple recipe that enables us to provide a tea, which is unrivalled in taste, colour, depth and aroma, and in fact we firmly believe nobody can deliver a better cup.

Infusion
Most teas made from leaves petals and flowers are prepared by infusion. Infusion allows the oils in the parts of the herb to be released gently; if the herbs were boiled, the oils would evaporate.
Place tea in the pot, pour in boiling water, and allow mixture to steep for 5-10 minutes, or until the delicate flavours are released. To extract most herbs medicinal properties, steep for 15-30 minutes. Strain and serve.

Decoction
The decoction method is used mainly
for teas made from roots, seeds and barks whose active ingredients are more difficult to release. Herbal teas prepared by decoction generally tend to stay fresher than do teas prepared by infusion.
Bring water to boil over high heat. Add seeds, roots or bark, reduce temperature, and allow mixture to simmer for 5 to 10 or 20 minutes.
