A three year ‚biennial‘, it flowers the third year and dies. All parts share the special flavour. The leaves can be stewed with fruit, the shoots are used in salads, the stems and roots as a vegetable and the seeds in pastry dishes. Distilled seeds and root oil is used in gin, vermouth and perfumes. This plant needs a special place in the garden.
